Pitted crushed green olives seasoned with sweets
Ingredients: Olives, sunflower oil, sweet pepper, garlic, Sicilian oregano, fennel seeds.
Green olives harvested by hand and crushed within 24 hours, matured for several months in brine
natural to lose the bitterness. They are then pitted.
The olives that are used are of the “Giarraffe” variety, a production area of the Belice valley in the western part of Sicily, and of the “Nocellara Etnea” variety from the areas on the slopes of Etna.
They are yellow to straw yellow when ripe.
Olives seasoned according to the recipes of our tradition, in various tanneries to tease and capture the most demanding palate.
These are fresh ideal to be eaten in appetizers.
