This method allows us to select only the best fruits, ensuring a flawlwss product. Manual harvesting, compared to mechanized methods, preserves the integrity of the olives and keeps their organoleptic qualities intact.

Arrival and Selection in Our Warehouses
Once harvested, the olives are transported to our warehouses in perforated plastic crates, specifically designed to ensure optimal ventilation and prevent any damage to the fruits.
Here, the olives undergo manual selection, carried out by our experts.
Each olive is carefully examined to ensure that only the best fruits continue the production process.
Calibration and Storage of Olives
After selection, the olives are calibrated according to their size, following international standards. This step is crucial to ensure a homogeneous and high-quality product.
The olives are then stored in food-grade plastic barrels in our warehouses, where they rest while awaiting processing.
Proper storage of the raw material is essential to keep the olives’ organoleptic characteristics intact.
Processing, Packaging and Preservation
In the final stage of our production process, the olives are processed and packaged in our facility in various formats, adapting to the different needs of our customers.
After packaging, the finished product is stored in refrigerated chambers at controlled temperatures, ensuring the perfect preservation of the olives until shipment.
